Beef Stroganoff
Ingredients:
Olive oil
1.5 lb beef sirloin, cut into strips or chunks
salt and pepper
6 tbsp unsalted butter, divided
12 oz sliced mushrooms
1 medium yellow onion, chopped
1 tbsp tomato paste
2 tbsp flour
2 cups beef broth
1/4 cup sour cream
2 tsp Dijon mustard
2 tsp lemon juice
1 tbsp parsley

Directions:
Add olive oil into large skillet and put on medium-high heat. Season the beef with salt and pepper. Add beef to skillet and cook until no longer pink. Transfer beef to a plate
Melt 2 tbsp butter, add the mushrooms and cook, stirring occasionally until well browned, season with salt and pepper. Transfer to plate with beef
Heat 4 tbsp butter, add the onion and cook, stirring until lightly caramelized. Add tomato paste and cook, stirring until lightly brown, whisk in flour and cook, stirring for about 1 minute.
Pour in beef broth, whisking constantly, bring to a full boil. Put on low heat
Whisk in sour cream, mustard, lemon juice, and season with pepper
Add in beef and mushrooms and parsley, mix.
