Beef Stroganoff

Ingredients:

  • Olive oil

  • 1.5 lb beef sirloin, cut into strips or chunks

  • salt and pepper

  • 6 tbsp unsalted butter, divided

  • 12 oz sliced mushrooms

  • 1 medium yellow onion, chopped

  • 1 tbsp tomato paste

  • 2 tbsp flour

  • 2 cups beef broth

  • 1/4 cup sour cream

  • 2 tsp Dijon mustard

  • 2 tsp lemon juice

  • 1 tbsp parsley

Side Items:

  • Egg Noodles

  • Pasta

  • Green Beans

Directions:

  1. Add olive oil into large skillet and put on medium-high heat. Season the beef with salt and pepper. Add beef to skillet and cook until no longer pink. Transfer beef to a plate

  2. Melt 2 tbsp butter, add the mushrooms and cook, stirring occasionally until well browned, season with salt and pepper. Transfer to plate with beef

  3. Heat 4 tbsp butter, add the onion and cook, stirring until lightly caramelized. Add tomato paste and cook, stirring until lightly brown, whisk in flour and cook, stirring for about 1 minute.

  4. Pour in beef broth, whisking constantly, bring to a full boil. Put on low heat

  5. Whisk in sour cream, mustard, lemon juice, and season with pepper

  6. Add in beef and mushrooms and parsley, mix.

  7. Serve with sides
