Ground Beef & Cauliflower Rice Casserole
Ingredients:
1 tbsp olive oil
1 small yellow onion, diced
3 cloves garlic, minced
1.5 lb lean ground beef
1 tsp Italian seasoning
1/2 tsp sweet paprika
Salt & pepper, to taste
6 oz fresh baby spinach
1 package (10oz) frozen cauliflower rice, cooked according to the directions on package
1 cup sour cream
1 tbsp butter
1/2 tsp dried basil
*2-3 tbsp milk, if needed*
8 oz shredded italian blend cheese, or any other cheese you have/prefer
Directions:
Preheat oven to 375º
Heat olive oil in large 12-inch skillet over medium high-heat
Add onions and cook for 2 min
Add garlic and cook for 20 sec
Add ground beef; season with italian seasoning, paprika, salt, and pepper
Continue to cook, breaking up the meat with wooden spoon, cook until beef is completely browned
Add spinach- may have to do in batches, cook, stirring frequently, for 1 more min or until wilted
Remove from heat, drain liquid from skillet, set aside
In a 9x13 inch baking dish combine cooked cauliflower rice, sour cream, butter, and dried basil, stir and mix until completely combined and creamy.
Add prepared beef mixture to baking dish; stir everything until everything is completely incorporated
Top with shredded cheese
Bake for 22-25 min
Remove from oven and let sit for several minutes before cutting and serving
