Ground Beef & Cauliflower Rice Casserole

Ingredients:

  • 1 tbsp olive oil

  • 1 small yellow onion, diced

  • 3 cloves garlic, minced

  • 1.5 lb lean ground beef

  • 1 tsp Italian seasoning

  • 1/2 tsp sweet paprika

  • Salt & pepper, to taste

  • 6 oz fresh baby spinach

  • 1 package (10oz) frozen cauliflower rice, cooked according to the directions on package

  • 1 cup sour cream

  • 1 tbsp butter

  • 1/2 tsp dried basil

  • *2-3 tbsp milk, if needed*

  • 8 oz shredded italian blend cheese, or any other cheese you have/prefer


Directions:

  1. Preheat oven to 375º

  2. Heat olive oil in large 12-inch skillet over medium high-heat

  3. Add onions and cook for 2 min

  4. Add garlic and cook for 20 sec

  5. Add ground beef; season with italian seasoning, paprika, salt, and pepper

  6. Continue to cook, breaking up the meat with wooden spoon, cook until beef is completely browned

  7. Add spinach- may have to do in batches, cook, stirring frequently, for 1 more min or until wilted

  8. Remove from heat, drain liquid from skillet, set aside

  9. In a 9x13 inch baking dish combine cooked cauliflower rice, sour cream, butter, and dried basil, stir and mix until completely combined and creamy.

  10. Add prepared beef mixture to baking dish; stir everything until everything is completely incorporated

  11. Top with shredded cheese

  12. Bake for 22-25 min

  13. Remove from oven and let sit for several minutes before cutting and serving
