Honey Mustard Pretzel-Crusted Chicken

Ingredients:

  • 4 cups hard sourdough pretzels, coarsely crushed

  • 1/2 cup olive oil

  • 1/2 cup dijon mustard

  • 1/3 cup honey

  • 1/4 cup water

  • 3 tbsp red wine vinegar

  • Salt and pepper

  • 3-4 chicken breasts

  • honey mustard for dipping/drizzle

Side Items:

  • Roasted Veggies

  • Rice

  • Mashed Potatoes

  • Green beans

Directions:

  1. Preheat oven 400º and spray a baking pan

  2. In food processor pulse the pretzels until coarsely ground then add into a bowl

  3. In a separate bowl, add oil, mustard, honey, water and vinegar, mix until well blended

  4. Coat chicken in dressing then dredge in pretzel mixture, add to the pan, bake for 25 minutes

  5. Let chicken sit for 5 minutes, serve with sides and drizzle with honey mustard

• you can either use your honey mustard for drizzle or a store bought honey mustard
