Nacho Recipe for the Win

Ingredients:

  • 1 lb ground beef

  • 1/2 cup yellow onion

  • 1/2 tsp ground cumin

  • 1/2 tsp chili powder

  • 1/2 tsp salt

  • 1/2 tsp pepper

  • 9 oz tortilla chips

  • 1 15 oz pinto beans, drained and rinsed

  • 12 oz shredded Mexican Blend cheese

  • 1/2 cup minced red onion

  • 1 jalapeño (if you like spice)

  • 1 medium sized avocado, diced

  • 1/4 cup chopped fresh cilantro

  • 1 cup jarred salsa

  • 1/2 cup sour cream

Directions:

  1. Preheat 400º, place ground beef and onion in a large nonstick skillet over medium.

  2. Sprinkle with cumin, chili powder, salt, pepper (or use can use taco seasoning packet), stir and cook until no longer pink and onions are softened.

  3. Drain the grease and transfer to a plate

  4. Line a large rimmed baking sheet with aluminum foil. Spread chips across pan in a single layer

  5. Top chips evenly with meat, beans, and cheese

  6. Bake in preheated oven until cheese melts and just begins to brown in places, about 8-10 minutes

  7. Remove from oven, top with red onion, jalapeño, avocado, sour cream, and cilantro. Serve with salsa
