Steak Bites with Sweet Potatoes & Peppers


Ingredients:

  • 1 large sweet potato, diced

  • 1 tsp salt

  • 1.5 lb flat iron steak, diced

  • 3 tbsp olive oil, divided

  • 2 cloves garlic, minced

  • 2 bell peppers, seeded and diced

  • 4 green onions, thinly sliced

  • 2 tbsp of coconut aminos or soy sauce

  • 2 tsp pepper

Directions:

  1. Place the diced sweet potatoes into a microwave safe bowl, then sprinkle with salt, cover with paper towel and microwave on high until barely tender, 4-6 minutes. Stir once halfway through.

  2. Heat a 12" skillet over high heat. Add 2 tablespoons olive oil and heat until simmering, add the steak, turning every two minutes, and cook until pieces are browned, about 10 minutes. Remove steak from skillet using slotted spoon and set aside on a plate

  3. Add 1 tbsp oil to skillet, add sweet potatoes, toss to coat in fat and cook until browned, stirring occasionally, until brown, 3-4 minutes

  4. Make a well in the center of the pan and add garlic. Sautee, stirring occasionally, until fragrant, 1 minute

  5. Add the bell peppers and scallions and toss with the potatoes, sautee, stirring occasionally, until the peppers are tender, 3-4 minutes

  6. Add the steak and juices back to the pan along with the coconut animos or soy sauce. Toss all of the ingredients and cook additional 1-2 minutes until liquid is evaporated

  7. Add pepper, toss and removed from heat, serve immediately
