Apple, Cheddar, Chicken Melts


Ingredients:

  • 8 slices of bread (I normally do sourdough)

  • 4 tbsp unsalted butter, softened

  • 4 tsp honey mustard

  • 2 1/2 cups of shredded, cooked chicken

  • 1 1/2 cups grated cheddar cheese

  • 1 small gala apple, cored and chopped

  • 4 oz Brussels sprouts (about 5), chopped

  • 1 tbsp lemon juice

  • Salt

  • Pepper

Directions:

  1. Preheat the oven at 450º, start cooking the chicken (I normally season with garlic salt, pepper, and seasoned salt). Once cook, shred with a fork.

  2. Spread butter evenly on one side of each of the 8 slices of bread. Spread the honey mustard on the opposite side of 4 slices of the bread.

  3. Grease the pan, place all of the bread slices butter side down. Evenly distribute the shredded chicken among the mustard spread bread slices then distribute the cheese on the remaining 4 slices.

  4. Put the pan in the oven and bake until the cheese is melted and bubbling (about 10 minutes).

  5. Make the slaw by combining the apple, Brussels sprouts, and lemon juice in a mixing bowl, add salt and pepper.

  6. Remove the baking sheet from the oven and transfer the slices with chicken to a cutting board/serving plate. Evenly distribute the slaw over the chicken and place the remaking bread slice cheese side down on top of the slaw to close the sandwich. Cut each sandwich in half and serve
