Back To School Eggentials with Eggland's Best

Back-to-school season means getting back into routines, packing lunches, and, most importantly, making sure everyone has something easy and delicious to eat before heading out the door! One of our back-to-school essentials?
Eggs!
When we run out of eggs from our girls, we head to the store to grab Eggland’s Best. I love the taste, and knowing that they’re packed with nutrients makes them an easy choice for our family.
Eggland’s Best eggs come from hens that are fed a unique, wholesome, all-vegetarian diet that never contains animal by-products or recycled food. Their eggs provide 6X more Vitamin D, 10X more Vitamin E, 25% less saturated fat, more than double the Omega-3s, and more than double the Vitamin B12 compared to ordinary eggs. They also stay fresher longer! With busy school mornings ahead, I’m all about simple recipes that can be made ahead, reheated, or grabbed on the go. Here are three of our favorite ways to enjoy Eggland’s Best eggs:
🍳 Scrambled Eggs
A classic breakfast that takes just a few minutes to make!
Ingredients:
Eggland’s Best Eggs
1 spoonful of cottage cheese
Salt, to taste
Pepper, to taste
Garlic powder, optional
Cooking spray
Directions:
Crack the eggs into a bowl and add a spoonful of cottage cheese.
Whisk everything together until well combined.
Spray a pan with cooking spray and heat over medium-low heat.
Pour the egg mixture into the pan and gently scramble with a spatula.
Cook until the eggs are fluffy and fully cooked.
Season with salt, pepper, and garlic powder, if desired.
Serve and enjoy!

🥚 Breakfast Sandwich Biscuits
These are one of my favorite make-ahead breakfast ideas for busy mornings. Make a batch over the weekend, keep them in the fridge, and reheat them throughout the week!
Ingredients:
1½ cups cottage cheese (I used 2%)
4 Eggland’s Best Eggs
1½ cups flour
1 teaspoon baking soda
1 cup shredded cheese
1 cup cooked breakfast sausage (I used chicken sausage)
Directions:
Preheat the oven to 400°F.
In a large bowl, combine the cottage cheese, eggs, flour, baking soda, cooked and cooled sausage, and shredded cheese.
Mix until everything is well combined.
Scoop 8–10 biscuits onto a parchment-lined baking sheet.
Sprinkle a little extra cheese over the tops, if desired.
Bake for 15–20 minutes, or until the tops are slightly golden brown and the biscuits are cooked through.
Let them cool before storing in an airtight container in the refrigerator.
Reheat before serving.
These are perfect for those mornings when you’re trying to get everyone dressed, bags packed, and out the door on time!
🥚 Hard-Boiled Eggs
Another back-to-school staple! Hard-boiled eggs are easy to make ahead and keep in the fridge for a quick breakfast, snack, or lunchbox addition.
Ingredients:
Eggland’s Best Eggs
Water
Ice
Directions:
Bring a pot of water to a boil.
Carefully add the eggs.
Boil for 10–15 minutes.
Remove the eggs from the heat and immediately place them into a bowl of ice water.
Let them sit in the ice water for about 10 minutes.
Peel and enjoy right away, or store them in the refrigerator for later.
Back-to-School Made a Little Easier 🤍
Between school drop-offs, activities, homework, and all the everyday chaos that comes with having kids, I’m always looking for ways to make our routines a little easier.
Having eggs on hand means I always have a simple breakfast option ready to go, and with Eggland’s Best, I feel good about serving my family something delicious and nutrient-packed.
