There are some days when I absolutely love having a crockpot meal ready to go. But then there are the days when I completely forget to put something in the crockpot, or honestly, I’m just not in the mood for a crockpot meal.
If you’re looking for something quick, easy, and family-friendly, this Cheesy Taco Pasta is one you need to add to your dinner rotation.

Why I Love This Recipe
This is one of those meals that feels like comfort food without requiring a ton of effort.
It serves six and only requires about five minutes of prep. Even better, you probably already
have most of the ingredients sitting in your pantry or fridge.
What You’ll Need
Large shell pasta
Ground beef
Taco seasoning
Water
Your favorite salsa
Cottage Cheese
Shredded cheddar cheese
Tortilla chips for topping, if you want a little crunch
How to Make It
Start by cooking your pasta according to the package directions and drain it. While the pasta is cooking, brown your ground beef in a large skillet and drain any excess grease. Add the taco seasoning and water, then let it cook until the water has cooked down. Add the cooked pasta back into the pan along with your salsa, cottage cheese, and shredded cheddar cheese. Give everything a good stir until the cheese is melted and everything is combined. That’s it!
You can serve it as-is or add your favorite taco toppings. Tortilla chips, sour cream, extra cheese, tomatoes, or green onions would all be delicious additions. The original recipe also suggests crunchy tortilla chips on top.
