Easy Crockpot Chicken Teriyaki & Noodles

Recipe inspiration: I got this receipe from Cooking with Caitlyn’s Kitchen on Instagram. I’ve made
it in the crockpot and separately, and both ways are delicious!
If you need an easy dinner that the whole family will actually want to eat, make this! This teriyaki chicken is seriously SO yummy. The sauce is sweet, savory, and packed with flavor, and the best part? It’s incredibly easy to make.
I love serving the chicken and broccoli over ramen noodles, but white rice is also delicious. And honestly, that extra sauce spooned over the top is my favorite part!
What You’ll Need
For the Teriyaki Sauce
¾ cup soy sauce
¾ cup brown sugar
1 tablespoon minced garlic
1 teaspoon ground ginger
1 teaspoon sesame oil
1 tablespoon rice vinegar
¼ cup honey
2 tablespoons cornstarch
For the Chicken
1½ pounds boneless, skinless chicken thighs or chicken breasts
½ onion, sliced
1 head broccoli, cut into florets
8 ounces Japanese-style ramen noodles, cooked according to package directions
OR
4 cups cooked white rice
Optional Toppings
2 tablespoons butter, for an extra silky sauce
Sesame seeds
Sliced green onions
How to Make Crockpot Teriyaki Chicken
1. Make the sauce
Add the soy sauce, brown sugar, garlic, ginger, sesame oil, rice vinegar, honey, and cornstarch directly to your crockpot. Whisk everything together until the sauce is well combined.
2. Add the chicken
Add your chicken and sliced onion to the crockpot. Turn the chicken a few times so it's coated in the teriyaki sauce.
3. Let the crockpot do the work
Cover and cook on LOW for about 4 hours, or until the chicken is tender and fully cooked.
4. Shred the chicken
Once the chicken is cooked, shred it right in the crockpot using two forks.
If you want an extra silky, rich sauce, stir in the butter at this point until melted.
5. Add the broccoli
Add the broccoli during the last 20–30 minutes of cooking.
If you prefer your broccoli a little firmer, you can steam it separately instead and add it when you're ready to serve.
6. Make your noodles or rice
While the broccoli is cooking, prepare your ramen noodles according to the package directions.
You can also serve this over about 4 cups of cooked white rice.
7. Serve!
Spoon the teriyaki chicken and broccoli over your noodles or rice, then drizzle some of that extra sauce over the top. Finish with sesame seeds or green onions if you'd like.
My Favorite Way to Serve It
I personally love this over ramen noodles because they soak up all that extra teriyaki sauce. 🤤
But if you're feeding a family with different preferences, rice is an easy option too. You really can't go wrong!
Easy Dinner, Big Flavor
This has quickly become one of those recipes I keep coming back to because it checks all the boxes: easy, cozy, flavorful, and family-friendly. And because I've made it both in the crockpot and separately, I love having the flexibility depending on what our day looks like. If you're in your "what are we having for dinner?" era, save this one. 😉 Recipe inspired by Cooking with Caitlyn’s Kitchen. Be sure to give her a follow for more delicious recipes!
