Balsalmic Chicken & Veggies


Ingredients:

  • 2 tbsp olive oil

  • 3 Chicken Breasts (sliced or cubed)

  • Salt and Pepper (I like to use garlic salt, seasoned salt, and pepper)

  • 1/4 cup + 2 tbsp Italian Salad Dressing

  • 3 tbsp Balsamic Vinegar

  • 2 tbsp Honey

  • Red Pepper Flakes (sprinkle on desired spice level)

  • Asparagus (look for thinner, trim tough ends, chopped into 2-inch pieces)

  • Carrots (matchstick or chips)


Side Item Option:

White Rice


Instructions:

  1. In a mixing bowl, whisk together salad dressing, balsamic vinegar, honey, & red pepper flakes, set aside.

  2. Heat olive oil in a 12-inch skillet over medium-high heat. Season chicken with salt and pepper, then place chicken in skillet

  3. Cook chicken until thoroughly cooked, golden brown

  4. Transfer chicken to plate and add more olive oil if needed

  5. Add asparagus and carrots to skillet, season with salt and pepper, stirring until crisp-tender (about 4 minutes)

  6. Add chicken back to the skillet and pour dressing mixture into skillet, stir until all chicken and veggies are covered.

  7. Serve with warm white rice
