Chicken Smashburgers

Ingredients:
1 lb ground chicken
2 tsp vegetable oil
4 hamburger buns
8 slices ( halved, divided)
Salt and Pepper
1 small red onion, very thinly, divided
1 jalapeño, very thinly sliced, divided
Ketchup
Directions:
Working the chicken as little as possible, roll into 4 meatballs, press down slightly to make tops flat
Cook bacon
Heat oil over medium-high, season the meatballs and use a spatula to smush down the balls as thin as possible
Top each patty with a quarter of onion and jalapeño, press into meat, cook until browned underneath (about 2 min), flip over and cook until patties are cooked through and onion is golden
Toast the buns and place the bacon and patties, then serve with ketchup
