Chicken Smashburgers

Ingredients:

  • 1 lb ground chicken

  • 2 tsp vegetable oil

  • 4 hamburger buns

  • 8 slices ( halved, divided)

  • Salt and Pepper

  • 1 small red onion, very thinly, divided

  • 1 jalapeño, very thinly sliced, divided

  • Ketchup

Directions:

  1. Working the chicken as little as possible, roll into 4 meatballs, press down slightly to make tops flat

  2. Cook bacon

  3. Heat oil over medium-high, season the meatballs and use a spatula to smush down the balls as thin as possible

  4. Top each patty with a quarter of onion and jalapeño, press into meat, cook until browned underneath (about 2 min), flip over and cook until patties are cooked through and onion is golden

  5. Toast the buns and place the bacon and patties, then serve with ketchup
