Sweet Chili Chicken & Brussel Sprouts


Ingredients:

Brussel Sprouts

  • 12 oz Brussel sprouts, stemmed and halved

  • 1 tbsp olive oil

  • 1 tsp salt

  • 1 tsp pepper

Chili Chicken

  • 1 lb chicken breast, diced

  • 1 tbsp olive oil

  • 2 tsp ground ginger

  • 1 tsp garlic powder

  • 1 tsp chili powder

  • 1/2 tsp salt

  • 1/4 cup sweet chili sauce, and more for serving

Side Options:

Quinoa

Rice


Directions:

  1. Cut the stems off the Brussels sprouts before cutting them in half and tossing in olive, oil, salt, and pepper

  2. Add the Brussels sprouts to an air fryer basket and cook at 400º for 10 minutes

  3. While the Brussels sprouts are in the air fryer, coat the diced chicken breast in the olive oil before adding the ground ginger, garlic, and chili powder, and salt. Stir to fully coat the chicken

  4. After the Brussels sprouts have cooked for 10 minutes, add the chicken breast to the basket and gently stir everything together

  5. Air fry for an additional 10-12 minutes at 400º until the chicken reaches an internal temperature of 160º to 165º. Stir halfway through for even crisping on Brussels sprouts

  6. Add 1/4 cup of sweet chili sauce and stir everything together. Air fry or broil for an additional 1-2 minutes to caramelize the sauce. Serve with rice, toasted sesame seeds, lime wedges, and additional sweet chili sauce, if desired.


Notes:

If you have a double basket air fryer then you can cook the Brussels sprouts in one basket and chicken in the other at the same time. This is what I did and it cut down the cooking time.
