Crockpot Chicken Pot Pie with Homemade Biscuits


With sports starting back up, I’m officially in my easy dinner season. Between practices, games, school, and all the other things that somehow fill up our evenings, I need dinners that don’t require me to be standing in the kitchen right before we have to walk out the door.

And that’s exactly why I love this crockpot chicken pot pie.


My Favorite Way to Make It

The original crockpot chicken pot pie recipe I use is from Eating on a Dime, and it is delicious. Their recipe includes chicken, cream of chicken soup, milk, frozen mixed vegetables, potatoes, celery, onion, and seasonings.


I’ve made the recipe as written, but over time I’ve figured out what my family prefers.

I leave out the onions, celery, and potatoes. It’s a small change, but honestly, we like it so much better this way. I keep the chicken, creamy sauce, and vegetables, and then serve it over white rice with homemade biscuits.


Homemade Buttermilk Biscuits

For the biscuits, I use Melissa’s Southern Style Kitchen Fluffy Southern Buttermilk Biscuits recipe. They are fluffy, buttery, and the perfect addition to the creamy chicken mixture.


The recipe uses simple ingredients like all-purpose flour, baking powder, baking soda, salt, cold butter, and buttermilk. I make the biscuits separately while the chicken pot pie is finishing up in the crockpot.


Why This Is Perfect for Sports Season

This is one of those meals I come back to when our schedule gets busy. I can get the chicken pot pie going earlier in the day, and then when dinner rolls around, most of the work is already done. The chicken cooks low and slow, and at the end you simply shred it and stir everything together. That means less time worrying about dinner when we're trying to get out the door for practice or a game.
