Homemade Mixed Berry Pop-Tarts: A Recipe Worth Making

I thought I would start sharing recipes I find and actually make that are winners in our house. I’ll always tag and credit the original creator whenever I can because, let’s be honest, I’m not out here inventing these recipes 😂. I’m just finding the good ones so you don’t have to!
A few days ago, we were craving Pop-Tarts, so naturally I turned to Pinterest. I found this homemade mixed berry Pop-Tart recipe and decided to give it a try. And honestly? It was SO much easier than I expected.

Was it worth it? Like most homemade recipes, these do take a little more time than grabbing a box from the grocery store. Between making the dough, preparing the berry filling, assembling everything, and waiting for them to bake, it’s definitely a project. But they were SO good and felt like such a fun treat to make at home.
The crust was flaky, the berry filling was sweet and tart, and the icing + sprinkles made them feel like the real deal. My biggest tip is to make sure you give yourself enough time to chill the dough and let the filling cool. Those steps make the assembly much easier.
A few things I’d note:
These are definitely a weekend/baking-project recipe rather than a quick breakfast.
You can make the dough ahead of time, which makes the process easier.
The mixed berry filling could easily be swapped for another flavor.
Don’t skip the chilling steps; the dough needs to stay cold.
And yes, the sprinkles are absolutely necessary.
